1/2 cup butter, unsalted (1 stick)
3/4 cup sugar
1 3/4 cups pureed bananas
(I use between 1.5 to 2 cups of bananas)
1/3 cup milk
1 tsp. vanilla
2 cups unbleached AP flour
1/2 cup mini chocolate chips (omit for regular bread)
1 tsp. baking soda
1/2 tsp. salt
Set oven to 350º. Cream butter and sugar. Beat eggs in. Mix in bananas with mixer. Add milk and vanilla. Mix in flour, chips, soda and salt. Mix until dry ingredients are moist. Don’t overmix.
Pour into a buttered loaf pan and bake, depending on size of loaf pan, 50-60 minutes. Start checking doneness with a wooden chopstick starting at 45 minutes, so you don’t overcook bread.
Enjoy with real butter or cream cheese!
