Lemon Nut Bars

A crisp oatmeal crust topped with a pleasing tart, lemon cream cheese layer. 


1-1/3 cups flour

1 cup old fashioned or quick oats, uncooked

1/2 cup packed brown sugar

1 egg

1/2 tsp salt

3/4 cup butter

1/2 cup chopped nuts

1- 8 oz. package cream cheese

2 Tbsp. lemon juice

1 tsp grated lemon rind


Combine flour, oats, sugars and salt; cut in butter until mixture resembles coarse crumbs. Stir in nuts. Reserve 1 cup of crumb mixture; press remaining crumb mixture into bottom of greased 9x13 inch pan. Bake at 350 degrees, 15 minutes.

Combine softened cream cheese and egg, mixing until well blended. Blend in lemon juice and rind. Pour over crust; sprinkle with reserved crumb mixture. Bake at 350 degrees, 25 minutes. Cool, cut into bars.
