Pecan Delights


2 1/4 cups packed brown sugar

1 cup butter

1 cup light corn syrup

1/8 tsp. salt

1 can sweetened condensed milk

1 tsp. vanilla

1 1/2 lbs. whole pecans

1 cup semi-sweet chocolate chips


In a large saucepan combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add condensed milk and continue stirring. Cook until candy thermometer reads 248º (firm ball stage). Remove from heat and add pecans and vanilla.

Drop by tablespoon onto parchment paper. When cool, melt chocolate chips and drizzle over each one.
